I have seen so many banana pancake recipes all through my Instagram feed. I had never had them before and I always think when I see the posts that it would be a great thing to try. Well I finally got around to making some. I found a recipe originally from Karlie Kloss’s Instagram account (@karliekloss). She was the first account that I had seen put oats in hers. I know this might not be a new thing and people must do it all the time, but it was new to me!

I didn’t have any oats when I first wanted to make these pancakes, and I kept putting of getting them because leaving your house right now is just so hard (not meaning there is too many restrictions, but because it is just so comfy being home and sitting on your couch). Well, I finally went to get oats, I walked all the way to CVS (a whole 10 minutes, a lot.. I know) and grabbed the only type of oats they had, Quaker.
This was actually super easy and turned out way better than I thought it would. I didn’t understand how just three ingredients would actually work to make pancakes. But it worked and they were super yummy! The below instructions allowed me to make 3 medium sized pancakes. Again, coming from my last post, I really only cook for myself. The amount of batter that these ingredients makes will also depend on the size of your bananas and eggs.

Ingredients
2 bananas
2 eggs
1/2 cup oats
Just peel and mash the bananas in a bowl, then add the two eggs and mix together. Lastly, add the oats and mix again.
In a buttered pan over medium-low heat, scoop out half a cup of mix and let it cook for 3 – 4 minutes. Then flip and do the same for the other side. Repeat until your batter is gone.
I topped mine with peanut butter and honey. I also put some more banana slices on the side because you can never have too many bananas! Get creative with your toppings too.. chia seeds, coconut flakes, walnuts, whatever you like or have available will be great!
