Allison Bakes White Chocolate Macadamia Cookies


White chocolate macadamia cookies are one of my favorite cookies. I love the subtle sweetness of the white chocolate mixed with the salty macadamia nuts. Its a wicked yummy combination. I don’t bake very often, not because I don’t like to but because its hard to find the time and I usually don’t have all the necessary ingredients for what I want. One of the big things I am trying to do during this quarantine is get back into cooking and baking, as I, like everyone else, am finding myself with ample amounts of free time these days. So please enjoy the super simple cookie recipe below! (keep in mind, even if you don’t like white chocolate or macadamia nuts you can substitute any number of things for them).

White Chocolate Macadamia cookies

1 1/2 cups Macadamia nuts, roughly chopped

1 cup white chocolate chips

2 1/4 cups all-purpose flour

1 tsp baking soda

1 tsp salt

3/4 cup granulated sugar

3/4 cup brown sugar

2 large eggs

2 sticks butter, softened

1 tsp vanilla extract

  1. Preheat your oven to 375 degrees.
  2. In a medium bowl, combine flour, baking soda, salt, macadamia nuts and white chocolate chips. Set this bowl to the side.
  3. In a large bowl, combine butter, granulated sugar, brown sugar and vanilla extract. Beat together until the mixture is a creamy consistency. Once this has been reached, beat in both of the eggs.
  4. Take the medium bowl and slowly start incorporating the dry ingredients into the large bowl.
  5. Scoops or roll into balls and place onto an un-greased baking sheet (I normally cover mine with parchment paper.. less of a mess afterwards). Bake in the oven for 9 to 12 minutes, depending on the size of your cookies.
  6. Enjoy!

When I made my cookies, following this recipe I ended up with around 24 cookies.
